    We found out that rebooting iOS devices sometimes helps.

    No, it's not supported.
    On my desktop an browser, my email signature show logo and formatting.
    In iOS the email signature is without logo and formatting.

    It makes no sense to use TXT email signature in an HTML email. My OWA uses my HTML and shows formatting and images. Why not use the same format in iOS?
